Ingredients for 2:
1 Chicken breast
1 onion
2 coves garlic
160g pumpkin
2 tbs tomato paste
2 tbs butter chicken spice mix
270ml coconut cream
1 lemon – (use half for 2)
¾ cup basmati rice
1 ¼ cup water for rice
¾ cup water for curry
3 stems coriander
Coconut oil
Sea salt and cracked pepper
Method:
Prepare the vegetables. Finely chop the onion, crush the garlic, dice the pumpkin, and zest and half the lemon. Finely chop the coriander stems and pick the leaves for garnish.
Prepare the chicken. Halve the chicken lengthways and coat evenly in half of the spice mix, season with salt and pepper and drizzle with oil.
Prepare the rice. Rinse the rice in a sieve under cold running water until the water runs clear, add to a saucepan with the water and a pinch pf salt and bring to the boil, reduce the heat to low and cook covered with a lid for 10-12 minutes until all the water has been absorbed. Fluff with a fork and keep warm.
Meanwhile start the curry. Heat a drizzle of oil in a saucepan on medium-high heat and cook the onion, garlic and coriander stems for 3 minutes until softened and translucent, add the spice mix and tomato paste and fry for 1 minute until fragrant. Add pumpkin and water and bring to a simmer on medium-low heat. Cook covered for 5-7 minutes until the pumpkin is beginning to soften.
Add the coconut cream and season to taste, simmer for a further 10 minutes until the pumpkin is tender and the sauce is fragrant.
Meanwhile cook the chicken. Add a drizzle of oil to a frypan on medium-high heat and cook the chicken for 3-4 minutes on either side until golden, remove from the pan and carefully slice with a sharp knife into bite size pieces. Add the chicken to the curry sauce and stir through and simmer for a minute or so, check the seasoning and adjust if needed. Finish by stirring through the lemon zest and a squeeze of lemon juice.
Serve. Divide the rice among serving plates and top with the butter chicken curry and some coriander leaves to garnish. Serve immediately
